Recipe. Yeast dumplings

Yeast dumplings are large, hemispherical dumplings made from yeast dough and filled with Powidl (plum jam). After cooking and just before serving, they are poured with melted butter and sprinkled with a mixture of ground poppy seeds and powdered sugar in the classic Austrian method of preparation.

Another variation is to pour butter and/or vanilla sauce over them.
Yeast dumplings are boiled in salted water or steamed over boiling water.

Fluffy, soft and delicious: this is how yeast dumplings should taste! A yeast dumpling is an essential part of a stop-off at a ski hut or mountain pasture in the Tyrolean mountains. Here is the popular yeast dumpling recipe to try:

Ingredients and preparation

For 4 people you need the following ingredients:

- 300 g flour (plain)
- 20 g sugar
- 1 egg
- 100 g melted butter
- 100 ml lukewarm milk
- 1 pkg dry yeast or 1/2 cube fresh yeast (Dampfl)
- 1 egg yolk
- a little salt
- 100 g Powidl (plum jam) for the filling
- 50 g ground poppy seeds and 3-4 tbsp powdered sugar for serving
- vanilla sauce

The yeast dumplings are prepared like this:

Sieve the flour into a bowl. Knead the milk, sugar, egg, egg yolk and yeast with the melted butter and a little salt to form a smooth dough. Cover and leave to rise in a warm place until the dough has doubled in size (approx. 30 minutes)

Then divide the dough into quarters on a floured work surface, shape into dumplings and press a hollow into them. Now place a quarter of the Powidl in each hollow. Then press the dough well together over the filling and shape. Cover and leave to rise again for about 20 minutes.

Bring water with a pinch of salt to the boil in a large pan. Carefully place the dumplings in the boiling water and leave to stand for approx. 10 minutes.

Tip: The yeast dumplings are best cooked in a steamer or with a sieve insert over boiling water. Only add a little water to a pan and cook the yeast dumplings in the colander for approx. 10 minutes.

Serve immediately with poppy seeds and powdered sugar, possibly melted butter or vanilla sauce.
